If you are a fan of tender steaks, this homemade rib eye with butter will be your favourite. Try it with lemongrass butter on top.

  • Ingredients :

° 4 rib eye steaks, about 475 grams
° Salt and pepper from the grinder
° olive oil
° Soft Grass Butter
° cup of soft unsalted butter
° 1 clove finely minced garlic
° 1 c. Finely chopped fresh rosemary
° 1 c. Fresh chives, finely chopped
° 1 c. Finely chopped fresh thyme
° 1 c. finely chopped french leeks
° Salt and pepper from the grinder
° lemon butter
° cup of soft unsalted butter
° 2 tbsp. Finely chopped parsley
° 1 c. Lemon juice
° 1 c. lemon peel
° Salt and pepper from the grinder

Preparation :

In a bowl, pour the butter ingredients and mix well. Place on cellophane paper and form a cylinder. Roll the paper and roll the sides to press the butter. Refrigerate for at least 30 minutes.

We take out the meat, salt and pepper generously on all sides. Let it cool for 30 minutes on the counter.

On a grill heated to 400°F (or a cast iron skillet over medium-high heat), lightly oil the cooking surface and grill the meat for 2 minutes. Turn 45 degrees and continue cooking for 2 minutes. Flip and Repeat: Cook for 2 minutes, then stir for another 2 minutes. Depending on the thickness of the meat, it should be very rare. If necessary, continue cooking over indirect heat (or in the oven at 350°F if using a cast iron skillet) until desired doneness.

Remove the meat from the heat, put it on a plate and cover it with tin foil. Leave for 5 minutes before decorating with homemade butter slices.
