°700 gm beef (fillet)
°25 cl of white wine
°1 chopped onion
°1 bay leaf
°2 horns of thyme
°250gm fresh Paris mushroom slices
°3 tbsp. sweet pepper coffee
°10 g icing sugar
°20 cl heavy cream
°3 tbsp. mustard
°3 tbsp. Tomato paste
°salt
°pepper
*Preparation steps
Cut the meat into slices.
In a salad bowl, put beef, bay leaf, onion, thyme, 1 teaspoon paprika, salt, pepper, and wine.
Leave to soak for an hour, stirring occasionally.
Combine the meat on one plate and the onions in another plate.
Save the dressing juice.
In a saucepan, heat 2 tablespoons of olive oil and brown the meat for 2 minutes. Remove it and set it aside.
Fry the onions and mushrooms over medium heat with the rest of the sweet pepper and sugar.
When the mushrooms are reduced, add the juice of the marinade. Simmer for 5 minutes.
Add tomato paste, mustard, and cream. Cook on low heat for 5 minutes.
Adjust the spices.
Put the meat in the sauce and simmer for another 5 minutes (extend the cooking if you want well-cooked meat).
