Ingredients:
1/4 c extra-virgin olive oil
1 lb sweet Italian sausage
2 bell peppers, sliced
2 yellow onions, sliced
1 tsp kosher salt
1 tsp freshly ground black pepper
1 tbsp Italian seasoning
1/4 c chopped fresh basil leaves
4 garlic cloves, chopped
1 c Marsala wine (or chicken broth)
1 (15 oz) can diced tomatoes
Salt to taste
1/4 tsp red pepper flakes, optional
How to make Italian Sausage Peppers and Onions:
Step 1: In a heavy large skillet, heat oil over medium heat. Once the oil is
hot, add the sausages. Cook for about 7 to 10 minutes until both sides are
brown. Remove the browned sausages from the pan and drain excess oil.
Step 2: Add the Italian seasoning, basil, and garlic to the same pan. Cook
over medium heat for 2 minutes more.
Step 3: Stir in the Marsala wine, tomatoes, tomato paste, and chili flakes
(optional).
Step 4: Add in the peppers and onions. Season with salt and pepper and
bring the mixture to a simmer.
Step 5: Add the sausage to the skillet along with the vegetables. Adjust the
heat to low and continue to simmer for another 15 minutes or until the
the sauce has thickened.
Step 6: Once done, serve over mashed potatoes, noodles, polenta, or
cauliflower rice. Alternately, you can serve this as a sandwich. In half
lengthwise, split the hoagie rolls, and hollow out the bottom side of the
rolls. Make sure not to pierce the crust. Fill with the sausage mixture the
bottom half of the roll.
