HOW TO MAKE CRANBERRY CHRISTMAS CAKE!!!
This recipe for cranberry Christmas cake may seem simple, but it is everything but! I prepared it again not too long ago, and once everyone tasted it, they all asked for the recipe. It is incredibly delicious, buttery, soft, and bursting with flavor! Cranberries are delicious, so who doesn’t like them?
The winter holidays just wouldn’t be the same for me if I didn’t make this simple Cranberry Christmas Cake. I really like cranberries. This cake is delicious for breakfast or dessert with tangy cranberries and a thick, warm vanilla butter sauce. It is sweet and buttery but does not include any eggs.
This is an excellent dish for the holidays since it is easy to put together, tastes delicious, and can be baked for breakfast on Christmas morning as well as enjoyed as a holiday dessert. This cake is made entirely from scratch and only requires one bowl and no eggs. The majority of the components are pantry essentials; thus, the only thing you’ll need to add to your shopping list is fresh cranberries to use in the recipe. You can also use frozen cranberries!
THE INGREDIENTS LIST:
FOR THE CRANBERRY CAKE BATTER YOU’LL NEED:
Sifted all-purpose flour; I used 500 grams.
400 grams.Of cane sugar.
4 Tsp.Of baking powder.
1 Tsp.Of kosher salt.
Whole fresh cranberries; I used 4 cups.
400 ml.Of whole milk.
6 Tbsp.Of melted butter.
1 Tsp.Of vanilla extract.
AND TO MAKE THE VANILLA BUTTER SAUCE; I USED:
200 grams.Of cane sugar.
½ Cup.Of unsalted butter.
½ Cup.Of whipping cream.
1½ Tsp.Of vanilla extract.
METHOD OF WORK:
1st Step
Prepare a 9-by-13-inch pan with a light coating of cooking spray and preheat the oven to 350 degrees Fahrenheit.
2nd Step
In a large bowl, combine the ingredients for the cake: flour, sugar, baking powder, and salt. After adding the cranberries and stirring them to coat them, you will add the milk, vanilla, and melted butter to the dry ingredients and mix everything together until you have a thick batter.
3rd Step
After preheating the oven to 400 degrees, pour the mixture into pan(s) and bake for 40-50 minutes, or until the top is golden. When you insert a toothpick or skewer, it should come out clean or with only a few crumbs on it.
4th Step
Allow cooling on the wire rack. If necessary, cover the cake with a sheet of foil and bake it for an additional 10 to 15 minutes. Depending on your preferences, dust with coarse sanding sugar.
5th Step
While you are waiting for it, prepare the butter sauce. Butter, sugar, heavy whipping cream, and vanilla extract are melted together in a small saucepan with a thick bottom over medium-low heat.
6th Step
Bring the mixture to a boil while stirring often until the sugar is completely dissolved and it has the consistency of syrup. This should take around one minute.
7th Step
It is recommended that sauce be served warm; however, since it will thicken as it cools, if you need it to be thicker, just allow it to cool until it reaches the required consistency.
