Potato kilbasa soup. This is a soup you will fall in love with! It’s loaded with slices of sausage with slightly crunchy edges, soft and chewy potatoes, plus celery, carrots and onions.
*Ingredients:
° 1 pound kielbasa sausage, sliced
°2 cloves of freshly minced garlic
°1 tablespoon of olive oil
°1 small yellow onion, cut into cubes
°Half a cup of thinly sliced celery
°2 l carrots, peeled and cut into cubes
°4 cups of chicken broth
°1 pound potatoes, cut into cubes
°A quarter c grated Parmesan cheese
°2 cups of milk
°2 cups grated cheddar cheese
°1/4 cup coarsely chopped parsley
°Salt and pepper to taste
*How to make :
The first step:
In Dutch oven or soup pot, heat olive oil over medium-high heat
Add the sausage slices and cook for 5 to 6 minutes
Remove the sausage from the Dutch oven and place it on the sign
The second step:
In the same skillet, add the onions, garlic, carrots, and celery and cook for 2 minutes
Add chicken broth and add potatoes
Bring to a boil, then reduce heat to medium-low, cover, and cook for 15 minutes.
Third step:
Return the kilbasa to the pot and add the milk, parmesan and cheddar cheese. Season with salt and pepper
Mix well and leave for another 10 minutes over medium-low heat until the cheese melts
Remove from heat and garnish with chopped parsley
Serve immediately
