Ingredients:
1 pound lean ground beef
1 tsp salt
½ tsp each of ground black pepper, onion powder, and garlic powder
1 pound baby red potatoes, halved
3 carrots, either sliced or cubed
½ a white onion, sliced
2 tbsp olive oil
1 tbsp Italian seasoning
1 cup finely shredded Colby Jack cheese
Instructions:
Begin by preparing 4 large sheets of heavy-duty aluminum foil.
In a mixing bowl, combine the ground beef, garlic powder, salt, pepper, and onion powder. Mix until everything is well-integrated.
Form the mixture into 4 evenly sized patties. Place each patty in the middle of its foil sheet.
In a separate bowl, toss the potatoes, carrots, and onions with olive oil and Italian seasoning, ensuring they’re all well-coated.
Distribute the vegetable mix equally among the four foil packets, placing them around the beef patties.
To close the packets, bring the foil’s sides up, rolling the edges together. Flatten the ends and fold them inwards.
