INGREDIENTS:
Topping:
8 ounces
cream cheese 1 scoop
heavy cream 1 large can chopped, drained pineapple
¾ cup powdered sugar
½ cup pineapple chunks
½ cup nuts, grated coconut.
Dough:
1½ cup graham cracker crumbles
⅓ cup sugar
½ cup melted butter
PREPARATION:
Base:
Mix graham cracker crumbles with sugar. Add the melted butter and mix well. Press into an 8 x 8 or 9 x
9 inch skillet.
Filling:
In a large bowl, whisk together the softened cream cheese and powdered sugar until smooth.
Whisk together with the topping in a bowl. Then add the drained pineapple.
Spread the filling on the cake. Garnish with pineapple pieces and sprinkle with grated coconut.
Cool well – at least 4 hours, preferably overnight.
