Ingredients:

12-14 graham crackers (enough to cover a baking sheet)

1 cup unsalted butter

1 cup brown sugar

2 cups roughly chopped pecan halves

1/4 teaspoon salt

1 teaspoon vanilla extract

Instructions:

Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone mat.

Arrange graham crackers on the baking sheet. Break them as needed to fit.

In a saucepan, melt the butter over medium heat. Add brown sugar and salt, stirring until the sugar dissolves and the mixture is smooth. Mix in the chopped pecans. Bring to a boil for 2 minutes, stirring constantly.

Remove from heat. Stir in vanilla extract. Pour over the graham crackers, spreading into an even 1/4 inch layer.

Bake for 10-12 minutes, until golden brown and bubbling at the edges.

Allow to cool completely on the baking sheet. It will harden into a crunchy bark.

Break into pieces or cut into squares. Store in an airtight container at room temperature for up to a week.
