Bisquick Cinnamon Rolls

INGREDIENTS

2 1/2 cups Bisquick (low-fat)

2/3 cups soy or rice milk

3 Tablespoons sugar

2 Tablespoons vegan butter softened at room temp

Cinnamon Mixture:

3 Tablespoons sugar

2 teaspoons cinnamon

Glaze:

1 cup powdered sugar

1 tablespoon milk

Optional: 1/2 teaspoon vanilla or butterscotch extract

INSTRUCTIONS

1.Preheat the oven to425° F.

2.Mix the 3 tablespoons of sugar and 2 teaspoons of cinnamon together and set aside.

3.Mix the Bisquick, milk, and 3 tablespoons of sugar together in a large bowl until you have a ball. Knead about 8-10 times on a floured surface until it is pliable and soft. Roll out on the counter (clean it first for hell’s sake with a little Bisquick so it does not stick. Roll into a long triangle until it is about 1/4 inch thick.

4.Spread the softened vegan butter on the triangle of dough. Sprinkle the Cinnamon sugar mixture onto the butter. Roll the dough long ways and cut with a bread knife or use dental floss into 1-inch slices.

5.Place the biscuits close together in a greased 8×8 or 9×9 baking pan. Bake them until their golden brown, about 8-11 minutes(over baking will dry them out and require more topping to moisten!).

6.While the biscuits are cooking mix together the glaze by mixing all the ingredients together, set aside until the biscuits are cooled.

7.Once the biscuits are done let them cool to the touch but not longer. Spread the glaze on top and eat them warm. ENJOY!
